The ex-Man Utd star, who had been drinking heavily with pals, had been asked to leave the trendy Apres wine bar in Birmingham city centre after staff saw him smashing light fittings.
Cops were called when he rowed with doormen and decided to handcuff him — but as he was being led off he seized a bobby by the groin.
The PC, said to have been in "extreme discomfort", had to use the gas to make him let go.
Greening, who spent a night in the cells following the incident last April, admitted assaulting a police officer and was fined £5,000 by Birmingham magistrates.
He was also ordered to pay the cop £100 compensation, plus £87 costs.
